The buried amphora wines that Patrick Desplats has made since 2018, and since eschewing all of his previous cellar practices, are fascinatingly contentious. Some heads say blasphemy, some find them angelic. For us, Pat's latest era is one of a mature and elegant, sometimes brutal rusticity, each cuvée so of the little plots of Anjou lands at his disposal, so true to each vintage of their being; the wines don't hide their truths, and most demand a certain level of deep patience. They feel more akin to the earlier Domaine des Griottes era wines, and less so of the wildness of Pat’s mid 2010s production. Perhaps it is the lack of availability of these wines that lead to some drinkers making snap judgments about them. There is simply a lot of love in these special bottles—one doesn't only taste the juice of the grapes, but the trees, the clay, the air, and the soils all in each confounding and evocative sip.
Please join us at Baby Bistro on Sunday, June 29 at 6:30 PM for a rare opportunity to taste a number of Pat's amphora wines side by side.
