Sylvain Saux is a fringe figure, a periphery in the already peripheral universe of natural wine. Like the others in his circle that include Alexandre Coulange and Pierre Rousse, Saux works with varieties not often associated with the south like Chenin Blanc, Sauvignon Blanc, and Merlot. There is a precision and artful touch to Saux’s wines, a joyful simplicity. But it is surely his sweet wines that feel like odes to the Coteaux du Layon, and that I’ve spotted as treasures in many top cellars over the years that show the potential of working with Loire and Bordelaise varietals here in this special spot of the Languedoc.
